BLT, Vegan? Yes sir-ee! This BLT is vegan and pink to boot. Beet, Lettuce, & Tomato.
Ingredients for one sandwich:
- 1/4 cup cooked and sliced beets
- splash of red wine vinegar (scant 1/2 t)
- splash of udo oil (or olive oil) (scant 1/2 t)
- pinch tarragon
- dash salt & pepper
- 1/2 Roma tomato, sliced
- two large romaine lettuce leaves torn into large pieces
- 2 T vegan mayo
- two slices of your favorite bread, toasted is nice
To the sliced beets, add the splash of red wine vinegar, udo oil, pinch of tarragon and salt & fresh cracked pepper to taste. This mellows the strong flavor of the beets and makes a pretty nice beet salad straight up.
For the rest of the sandwich: take your toasted bread and slather on a little mayo, then layer on the beets. Notice your mayo will start to turn a lovely pink. If you want some serious pinkness, take a tiny splash of beet juice and mix it with your mayo. It will be the prettiest pink ever and won’t mess with the mayo flavor. It’s like magic! Next add the lettuce and spread on a little more mayo helping to hold the tomato slices in place, which are added next. You can sprinkle on a little more salt & pepper if you like. For my sandwich I also added fresh sliced mushrooms because I just can’t get enough B vitamins and selenium.
Now the fun part: an hors d’oeuvre or a cute pink snack. Mini Me BLTsFor these mini pink BLTs, go to town coloring the mayo with beet juice. Then use the same ingredients, but replace your favorite cracker for bread, and stack up Mini Me BLTs. They’re so cute, crisp and better for your crunchy six-pack than the traditional BLT.
