Raw Almond Oatmeal Raisin Bites

Pretty certain these are the tastiest nibbles I’ve created in a while. They beat old-fashioned oatmeal raisin cookies by a landsilde, too. I’m thinking you’re going to like the almondy-ness that the almond extract brings out in these rich but healthful treats.

  • 1 c raw almonds (or roasted if you can’t find raw, no biggy)
  • ¾ c rolled oats
  • ½ t cinnamon
  • ¼ t salt
  • ¾ c unsweetened shredded coconut (plus more for rolling)
  • 1 banana – cut into chunks
  • 1 ½ c raisins
  • 1 T coconut oil
  • 1 t honey
  • 1 t almond extract

Take ½ cup raisins to set aside in a bowl, sprinkle the almond extract over them and allow to soak while mixing up the other ingredients.

Place the almonds oats cinnamon and salt in a food processor and process until there are no large chunks. Add the ¾ c shredded coconut. Then add 1 cup raisins plus the banana chunks, coconut oil and honey. Process until smooth. Finally pulse in the half cup of raisins soaked in almond extract, or stir them in by hand.

Take small 1 teaspoon or so sized balls and roll them in about ½ cup of additional shredded coconut.

Store in airtight container and in the refrigerator if you don’t just gobble them up straightaway.
