What do these three ingredients have in common?
Popsicles? Ewwwww, no!
Let’s just say this is something for your BBQ this weekend.
Yes! Super easy-peasy bean burgers.
I’ve made bean burgers in the past and that recipe I do like; however, the novelty of using toasted oat cereal to make a bean burger is just too good.
Here’s what you’ll need:
- 1 can kidney beans, drained and rinsed
- 1 c Cheerios
- 1 egg (or your favorite vegan egg substitute, e. g. flax egg)
In a food processor, blend all three ingredients together until well incorporated. (It may work better for you to chop the cereal first, then add the other ingredients. Also, do not forget to drain and rinse the beans. You do not want to imagine the quagmirey mess that you will have for burger batter if you forget this step. Trust me. ) Add salt and pepper to taste and add any herbs you see fit. This time around I added dried chives.
Add a dab of oil to a heavy skillet and preheat it to medium heat. Form 4 – 5 burger patties. Cook 6-7 minutes on each side, or until heated through.
Serve with your favorite fixin’s and maybe on some fresh baked bread machine bread. Sound good?
Makes a sloppy open faced sandwich but the perfect summer burger nevertheless.
