Chickpea Wild Rice Soup

Thought I’d forgotten to share a recipe, didn’t-cha?

This soup deserves it’s own post (separate from this week in training).

Even the Soup Nazi would stand in line for a bowl.

So Yum.

Chickpea Wild Rice Soup:

  • 1.5 c cooked wild rice
  • 1.5 c cooked brown rice
  • 2 c cooked chickpeas
  • 2 c celery, chopped
  • 2 c carrots, sliced
  • 2 c mushrooms, sliced
  • 1 c pearl onions
  • 4 c vegetable broth
  • 1 c coconut milk
  • 1 T dried tarragon
  • 1 T dried savory
  • 1 T dried thyme
  • 2 bay leaves
  • salt and pepper to taste

In a large pot, combine all ingredients. Bring to boil; then reduce to a low simmer for about 20-25 minutes or until vegetables are tender.

Serve with crusty bread. Enjoy this light meal as you revel in the sometimes heavy-food-laden holiday season.
