Root Veggie Fries

Here’s a fun, quickie recipe for healthy fries.

Clean and thinly slice your favorite root vegetables: carrots, parsnips, beets, rutabagas, you name it.

Spread them out on a lightly oiled baking sheet or a sheet lined with parchment paper.

Sprinkle on top:

  • 1 T coconut oil
  • 1 T minced garlic
  • Salt / Pepper to taste
  • Smoked Paprika (optional)

If your house is like mine and the thermostat is set to the low 60s in the winter, this means your coconut oil sitting in your pantry is rock hard. Don’t bother melting it, just take a spoon and scrape some oil out. This will create perfect little coconut oil “sprinkles” to spread over your vegetables.

Works wonderfully. And this way the oil is spread out fairly evenly.

Bake your “fries” for about 30 min at 350. You may need to stir once or twice. They may take longer to cook, too, if your pan is over flowing… like mine.

These were a sweet side to our bean burgers tonight. YUM.
