Apples and bananas.
We love ’em straight up.
We love ’em in a good smoothie.
We put down so many apples and bananas around here that we’ll probably convince our new kittens to love them too.
But in brownies?
Seriously, these babies are for real.
Better than any bean brownies.
One way to recover and refuel post-exercise.
Or a nice accompaniment to your coffee and pre-fuel before a good hard run.
Have I convinced you yet?
Try this genuinely healthy and unique batch of brownies.
First, find your blender ’cause you’ll need it.
And feel free to substitute vegan yogurt or gluten-free flour.
They’ll be fudgy and goooood no matter your fancy.
- 1 medium banana
- 1 small apple, cored but peel intact
- 3 T coconut oil
- 4 T yogurt
- 1 T orange liqueur (weird, but just go with it)
- 1 T coffee liqueur (or vanilla)
- 1/4 t salt
- 1/2 t baking powder
- 1/2 c flour
- 1/4 c cocoa
- 1/4 c crystallized ginger
- 1/2 c dark chocolate chips
In a blender blend together all ingredients, except ginger and chocolate chips.
Add ginger and blend so that the ginger is not quite so chunky.
Stir in chocolate chips.
Spread evenly into a greased 8×8 inch pan and bake for 25 minutes at 300.
Allow to cool for at least 5 minutes.
