Don’t do that!
So after spending a good week in Colorado, I feel quite refreshed. Not 100% but well on my way. Really are we ever 100%? Let’s be real, no, probably not. I’m happy to be as healthy as I am.
All that thin air got me to thinking about anti-inflammatory foods. Ha! Just kidding. That thin air made me HANGRY! For anything and everything. Anyone else notice that with altitude? I’m pretty sure the bod has to work a bit harder and is thus just a bit hungrier.
Bring on the calories!
Back to reality where I do try to rely upon anti-inflammatory foods. They’re healthy and good for all bodily systems. Put high-octane foods in the engine, right? With that in mind, here’s a fun take on an orange-chocolate gluten free muffin.
I used a mini-muffin tin (which I love and use for everything!). If you don’t have such a muffin tin, then you can form cookies out of the dough. No excuses. You need your turmeric. Turmeric a super anti-inflammatory food. It’s great in most anything savory: burgers, popcorn, stir fry, etc. But it can be made into a sweet treat, too. However, don’t expect too much sweetness here. Sugar is pretty stinkin inflammatory, so try to go low on the sugar. This recipe is sweetened by an orange, dried banana chips and a bit of honey. Even the chocolate is dark, like truly dark. Talkin zero sugar. If you must, use a dark chocolate, but please NOT milk chocolate. Do your best to shy away from milk chocolate, there’s nothing good about it. The darker the chocolate the better and the more anti-inflammatory. You know, healthy stuff. So give this fun recipe a try.
Turmeric Orange 100% Dark Chocolate Mini-Muffins
- 1 c. shredded coconut (very finely shredded – like, macaroon coconut)
- 2/3 c. tapioca flour
- 8 oz. banana chips, finely blended
- 1 orange
- zest of one orange
- 1 egg
- 3 T honey
- 2 T. coconut oil
- 2 T. turmeric powder
- 1/2 t. salt
- 1/2 t. baking soda
- 4 oz. baking chocolate (aka: 100% cacao; 100% dark chocolate: 100% cocoa solids) chopped finely
Preheat oven to 300. In a blender, grind up banana chips to a powder. In a food processor, puree orange. Or you could probably use either the blender or the food processor. Use whatever you have. To the pureed orange, add all of the rest of the ingredients and, finally. stir in chocolate chunks. Bake for 15-20 min. Allow to cool for a few minutes. Store in airtight container.
